I've added a textbook that has a lot of country names in it and so I am really well practiced at guo (国）but I still need work on some of them e.g. meiguo (美国). It would be cool if Skritter could realize that I know 国 and stop asking me for it when I get mei wrong (when I get it right I'll still want Skritter to ask to make sure I'm using the correct guo).

I agree. Skipping through the character you know can help (space), although be careful not to overuse this.
